Brownie-Stuffed Chocolate Chip Cookies

I love chocolate chip cookies and I love brownies. So when I stumbled across a recipe for a brownie-stuffed chocolate chip cookie, I knew I had to try and bake some.
Spoiler Alert: These cookies turned out monstrously huge.

If you want to try making some of these delicious cookies, I’ve included the recipe below!
(Note: I used one package of regular brownie mix, but made the chocolate chip cookies from scratch so that when combined it wouldn’t be too overwhelmingly sweet.)

Brownie-Stuffed Chocolate Chip Cookies: Serves 10
1 package brownie mix
1 cup butter (make sure it’s at room temperature)
1 1/2 cups packed light brown sugar
2 large eggs
2 tablespoons vanilla
2 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
12 oz. bag miniature semi-sweet chocolate chips

Directions:
Preheat the oven to 350 degrees Fahrenheit.

For the chocolate chip cookie dough, begin by beating the butter and brown sugar until smooth. Next, add eggs and vanilla to the butter-sugar mixture and beat that until smooth.

In a separate bowl, combine flour, baking powder, baking soda, and salt. Stir thoroughly. Gradually add the flour mixture into the egg mixture. When fully combined, stir in the chocolate chips. Chill the dough in the refrigerator for at least an hour.

While the dough is chilling, prepare the brownies according to the package instructions and let cool. Cut about ten one-inch squares. There will be some brownies left over, but I’m sure you’ll find a way to get rid of them.

Set out a tray and line it with parchment paper. Grab the chilled dough, and scoop out batter using a 1/2 cup measure cup. Make sure each 1/2 cup is packed full. Then place the dough onto the parchment paper. After the dough is on the paper, make an indentation in the middle, and place a square brownie into it. Then pull the remaining dough over the brownie (essentially covering it).

Repeat this process until you have run out of chocolate chip dough (Note: If the dough gets too sticky, simply chill the dough in the refrigerator before restarting. Or if you prefer, work through the mess!).

Keep in mind that since these cookies are huge, try not to cram all ten cookies onto one singe tray. In my case, I split up the cookies onto two 15×20 inch baking sheets.

Bake cookies at 350 degrees Fahrenheit for about 18-24 minutes. Once the cookies are done, cool on a rack and enjoy!
